A few months ago I offered to make one of my much-loved chocolate finger cakes for the Macmillan coffee morning but in fairness I was feeling wiped out and was still suffering with really horrific morning sickness so kicked myself at making the offer when feeling so rubbish.
So whats a girl to do when feeling pants and there is cake to make … easy … cheat!
Since my cooking and baking journey is fairly new I am a dab hand with a packet mix and my current favourite is the Betty Crocker Devils Food Cake mix, its super moist and really chocolatey without being too thick.
After splitting the mixture into 2 sandwich cake tins and baking as per the instructions and then setting to cool it was time to cheat some more with the use of the Betty Crocker tempting chocolate icing that is ready-made and comes in a handy tub!
I smothered the cake all over and then lined up the Cadbury’s chocolate round the edge and then layered the smarties over the top!
It may not have been the most delicate of cakes and I certainly did not create a masterpiece but in less than an hour I had something to contribute to the cause without too much stress and without letting anyone down.
I must admit these chocolate finger cakes are fast becoming my favourite bakes this year and I might try some more festive versions over the coming weeks … even my husband can’t moan about it not being Christmas yet if he is getting to munch on the Christmas trial runs … Can he?
I think my christmas creations might have to features some white chocolate fingers and snowmen … However I will have to get my thinking cap on… Who knows I might even cheat again and use the ready-made packet mixes again … well I will be 30+ weeks pregnant so it is ok? Isn’t it?

It’s only a bit cheaty – and Betty Crocker is really gorgeous 😀 Besides, getting all the chocolate fingers to stand upright is hard enough!

Nothing wrong with a cake mix! I love these chocolate finger cakes, they are simple to make, but look so awesome!

Hi Nikki, nope just one packet of betty crockers fudge cake mix and used 2 sandwich tins, was going to attempt 2 but it would have meant the cake was way taller than the chocolate fingers 🙂
