There is no escaping that it is the time of year when bugs are everywhere. As soon as we get rid of one, it feels like another strikes. When we feel full of cold and generally run down the best meal has to be a comforting bowl of warming soup. One of my favourite ways to prepare vegetables is by roasting them. You can transform their flavours with a wide variety of oils and really brings out their sweetness. Using roasted vegetables in soups adds an extra depth of flavour that you do not get when boiling or steaming them. This recipe uses the lovely coconut oil and milk which, when combined with spices and sweet vegetables this soup will really give that cold a kick!
This is what I did…
Roast Butternut Squash, Sweet Potato and Coconut Soup
Ingredients
1 butternut squash, halved and seeds removed
2 sweet potatoes, peeled and quartered
Coconut oil
400mls coconut milk
400mls water
4 tsp garam masala
2 tsp ground cumin
Method
Preheat the oven to 200C
1 – Place the halved butternut squash into a large roasting tray and add the sweet potatoes
2 – Using your hands rub the vegetables thoroughly with coconut oil
3 – Place in the preheated oven and roast for 40 minutes
4 – Once the vegetables are nicely roasted and soft remove from the oven and allow to cool for 15 minutes
5 – Once the butternut squash is cool enough to touch scoop out the soft flesh and place in a blender
6 – Add the sweet potato, coconut milk and water to the blender and blitz until you have a smooth consistency
7 – Pour the soup into a large pan and gently warm over a medium heat
8 – Add the garam masala and ground cumin and stir thoroughly
9 – Serve with a drizzle of coconut milk and either a slice of bread or a naan
This soup is so full of flavour, it really does help you to warm up and is the ideal pick me up!
