With peanut allergies on the rise and consumers searching for a suitable alternative, recent years have seen demand for cashew nuts soar – indeed they are now the most popular nut in Europe AND America. High nut intake has been linked to lower rates of heart disease and lower rates of “all-cause mortality”.
My children are on medical exclusion diets which rule out the most common food proteins, so I am always on the look out for foods that give my children a protein boost. In common with many others with non-IgE food allergies we cannot have soya here either, so this recipe got me really excited, since cream alternatives are hard to find. So when I read you could whizz up cashew nuts to make “cream” it really got my attention!!!
